			<content:encoded><![CDATA[<p><strong>Chris’s Ondo’s homemade seafood stew</strong></p>
<p><strong><span style="text-decoration: underline;"> </span></strong></p>
<p>2.5 gallons water<br />
1 LB (orange roughy) OR (red snapper) fish fillets cut into 1 in cubes (boneless).<br />
1 LB large shrimp, peeled &amp; devained.<br />
1/2  LB sea scallops.<br />
1LB lobster claws<br />
1LB crab meat<br />
1 dozen clams – (whole in shell)<br />
1/3 cup minced fresh parsley.<br />
1/3 cup reduced fat mayonnaise.<br />
1 large onion<br />
1 teaspoon minced garlic<br />
1 tablespoon olive oil<br />
1/2  LB tomatoes seeded &amp; diced.<br />
1 teaspoon grated lemon peel<br />
1/4 teaspoon crushed red pepper flakes<br />
1 cup clam juice<br />
1 tablespoon tomato paste<br />
1/2 teaspoon sea salt</p>
<p>In large sauce pan sauté onion &amp; garlic in oil until tender.</p>
<p>Add tomatoes, lemon peel &amp; pepper flakes – cook &amp; stir for 2 mins.</p>
<p>Add the clam juice, tomato paste, whole clams and salt.</p>
<p>Bring to a BOIL, reduce heat, cover &amp; simmer for 10 mins.</p>
<p>Add the fish chunks, shrimp, scallops, lobster claws, crab meat and parsley.</p>
<p>Cover and simmer 15 more mins.</p>
<p>When the fish looks cooked you are done!</p>
