Seafood Stew

Chris’s Ondo’s homemade seafood stew

2.5 gallons water
1 LB (orange roughy) OR (red snapper) fish fillets cut into 1 in cubes (boneless).
1 LB large shrimp, peeled & devained.
1/2  LB sea scallops.
1LB lobster claws
1LB crab meat
1 dozen clams – (whole in shell)
1/3 cup minced fresh parsley.
1/3 cup reduced fat mayonnaise.
1 large onion
1 teaspoon minced garlic
1 tablespoon olive oil
1/2  LB tomatoes seeded & diced.
1 teaspoon grated lemon peel
1/4 teaspoon crushed red pepper flakes
1 cup clam juice
1 tablespoon tomato paste
1/2 teaspoon sea salt

In large sauce pan sauté onion & garlic in oil until tender.

Add tomatoes, lemon peel & pepper flakes – cook & stir for 2 mins.

Add the clam juice, tomato paste, whole clams and salt.

Bring to a BOIL, reduce heat, cover & simmer for 10 mins.

Add the fish chunks, shrimp, scallops, lobster claws, crab meat and parsley.

Cover and simmer 15 more mins.

When the fish looks cooked you are done!
