Chunky Chicken Chunks
Chris Ondo’s Crunchy Chicken Chunks
2 lbs boneless chicken breasts cut into nugget sized chunks
3 cups crushed potato chips, any favorite flavor
1 egg
2 tablespoons milk
1/3 cup melted butter
Put crushed potato chips into flat dish
In medium bowl beat egg and milk
Dip chicken chunks in milk mixture then in crushed potato chips
Place chicken on cookie sheet and brush with melted butter
Bake chicken at 350 degrees for about 15 minutes or until golden brown
Honey mustard sauce
3/4 cup light mayonnaise
3 tablespoons honey
2 tablespoons mustard
1 tablespoon lemon juice
1/4 teaspoon horseradish
1 tablespoon orange juice, as needed to thin sauce
Mix ingredients good to make honey mustard dipping sauce
Enjoy.
Seafood Stew
Chris’s Ondo’s homemade seafood stew
2.5 gallons water
1 LB (orange roughy) OR (red snapper) fish fillets cut into 1 in cubes (boneless).
1 LB large shrimp, peeled & devained.
1/2 LB sea scallops.
1LB lobster claws
1LB crab meat
1 dozen clams – (whole in shell)
1/3 cup minced fresh parsley.
1/3 cup reduced fat mayonnaise.
1 large onion
1 teaspoon minced garlic
1 tablespoon olive oil
1/2 LB tomatoes seeded & diced.
1 teaspoon grated lemon peel
1/4 teaspoon crushed red pepper flakes
1 cup clam juice
1 tablespoon tomato paste
1/2 teaspoon sea salt
In large sauce pan sauté onion & garlic in oil until tender.
Add tomatoes, lemon peel & pepper flakes – cook & stir for 2 mins.
Add the clam juice, tomato paste, whole clams and salt.
Bring to a BOIL, reduce heat, cover & simmer for 10 mins.
Add the fish chunks, shrimp, scallops, lobster claws, crab meat and parsley.
Cover and simmer 15 more mins.
When the fish looks cooked you are done!

Chicken Noodle Soup
Chris Ondo’s homemade chicken noodle soup
2.5 gallons water
3 LB’s chicken breast
1 large onion
1 large potato
3 bags carrots
2 Bags celery
1 tablespoon Pepper corns – spice
20 Bay leafs – spice
25 Chicken bouillons
Bag of noodles
Get a BIG pot (lobster pot) and fill with 2.5 gallons of water.
Peel carrots and cut up with onion, celery and put aside.
DO NOT shove these scraps down the garbage disposal which will only clog it.
Trust me I know.
BOIL the pot of water then put in the chicken and all other ingredients in then turn the heat down to a simmer. Now stir the soup once per hour and after a few hours the chicken will fall apart and look like shredded meat. You will also notice some of the water has evaporated and this is normal.
Now in another pot boil a gallon of water and boil the noodles of your choice for 15 minutes then strain in a spaghetti style strainer. Now rinse the noodles in cool water and put aside.
Grab a handful of noodles and put into a large cereal bowl then get a soup ladle and scoop the chicken soup and pour over the noodles.
